Established in 2022, Hiatus Craft House is a small-batch distillery and tasting room in Camarillo, California. Built on innovation by owners Dawn and Dave Gross, this distillery offers a handcrafted selection of high-quality whiskeys, agave spirits, vodka, gin, rums, and liqueurs. At the tasting room, guests can unwind with personalized six-spirit flights and are welcome to bring their own food to complement the experience. Beyond tastings, the space serves as a unique venue for workshops and private events. Dawn and Dave’s commitment to community extends beyond the still through their non-profit, the NewCo Foundation, which provides student internships and scholarships across Ventura County, turning craft and compassion into lasting impact.
